These Blueberry Oat Muffins are not only delicious but also packed with wholesome ingredients. Enjoy them as a nutritious breakfast or snack!

Ingredients:

  • 1 cup whole wheat flour
  • 1 cup rolled oats
  • 1/2 cup almond flour
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1/2 tsp cinnamon
  • 2 large eggs
  • 1/2 cup honey
  • 1/2 cup plain Greek yogurt
  • 1/4 cup melted coconut oil
  • 1 tsp vanilla extract
  • 1 cup fresh or frozen blueberries

Instructions:

  1. Preheat oven to 350°F. Line a muffin tin with paper liners or grease with cooking spray.
  2. In a bowl, combine the whole wheat flour, rolled oats, almond flour, baking powder, baking soda, salt, and cinnamon. Mix well to combine.
  3. In a separate bowl, whisk the eggs and then add honey, Greek yogurt, melted coconut oil and vanilla extract. Mix until well combined.
  4. Pour the wet ingredients into the dry ingredients and stir until combined.
  5. Gently fold in the blueberries until evenly distributed throughout the batter.
  6. Spoon the batter into the muffin cups, filling each about 2/3 full.
  7. Bake for 18-20 minutes or until a toothpick inserted into the center comes out clean.
  8. Allow the muffins to cool in the tin for 5 minutes, then transfer them to a wire rack to cool completely.
