These Blueberry Oat Muffins are not only delicious but also packed with wholesome ingredients. Enjoy them as a nutritious breakfast or snack!
Ingredients:
- 1 cup whole wheat flour
- 1 cup rolled oats
- 1/2 cup almond flour
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/4 tsp salt
- 1/2 tsp cinnamon
- 2 large eggs
- 1/2 cup honey
- 1/2 cup plain Greek yogurt
- 1/4 cup melted coconut oil
- 1 tsp vanilla extract
- 1 cup fresh or frozen blueberries
Instructions:
- Preheat oven to 350°F. Line a muffin tin with paper liners or grease with cooking spray.
- In a bowl, combine the whole wheat flour, rolled oats, almond flour, baking powder, baking soda, salt, and cinnamon. Mix well to combine.
- In a separate bowl, whisk the eggs and then add honey, Greek yogurt, melted coconut oil and vanilla extract. Mix until well combined.
- Pour the wet ingredients into the dry ingredients and stir until combined.
- Gently fold in the blueberries until evenly distributed throughout the batter.
- Spoon the batter into the muffin cups, filling each about 2/3 full.
- Bake for 18-20 minutes or until a toothpick inserted into the center comes out clean.
- Allow the muffins to cool in the tin for 5 minutes, then transfer them to a wire rack to cool completely.
