Ingredients:
For the Crust:
- 1 1/4 cups all-purpose flour
- 1/2 cup unsalted butter, cubed
- 1/4 cup granulated sugar
- 2-3 tbps ice water
For the Filling:
- 1 1/2 cups pecan halves
- 3 large eggs
- 1 cup light corn syrup
- 1/2 cup packed brown sugar
- 1/4 cup unsalted butter, melted
- 1 tsp vanilla extract
- 1/2 tsp ground cinnamon
- 1/4 tsp ground nutmeg
- 1/4 tsp salt
Instructions:
- Preheat your oven to 375°F
- For the crust: In a food processor, pulse together flour, butter, and sugar until it’s coarse. Add ice water, one tablespoon at a time, until the dough comes together. Shape into a disc, wrap in plastic, and refrigerate for 30 minutes. Roll out the dough and line a pie dish.
- For the filling: In a bowl, whisk together eggs, corn syrup, brown sugar, melted butter, vanilla extract, cinnamon, nutmeg, and salt until well combined. Stir in pecan halves.
- Pour the filling into the prepared crust.
- Bake for 40-45 minutes or until the filling is set and the crust is golden brown. If the edges brown too quickly, cover them with foil.
- Let it cool for at least 2 hours before serving. Serve with whipped cream or a scoop of vanilla ice cream.
