Ingredients:

For the Crust:

  • 1 1/4 cups all-purpose flour
  • 1/2 cup unsalted butter, cubed
  • 1/4 cup granulated sugar
  • 2-3 tbps ice water

For the Filling:

  • 1 1/2 cups pecan halves
  • 3 large eggs
  • 1 cup light corn syrup
  • 1/2 cup packed brown sugar
  • 1/4 cup unsalted butter, melted
  • 1 tsp vanilla extract
  • 1/2 tsp ground cinnamon
  • 1/4 tsp ground nutmeg
  • 1/4 tsp salt

Instructions:

  1. Preheat your oven to 375°F
  2. For the crust: In a food processor, pulse together flour, butter, and sugar until it’s coarse. Add ice water, one tablespoon at a time, until the dough comes together. Shape into a disc, wrap in plastic, and refrigerate for 30 minutes. Roll out the dough and line a pie dish.
  3. For the filling: In a bowl, whisk together eggs, corn syrup, brown sugar, melted butter, vanilla extract, cinnamon, nutmeg, and salt until well combined. Stir in pecan halves.
  4. Pour the filling into the prepared crust.
  5. Bake for 40-45 minutes or until the filling is set and the crust is golden brown. If the edges brown too quickly, cover them with foil.
  6. Let it cool for at least 2 hours before serving. Serve with whipped cream or a scoop of vanilla ice cream.
